Sharp Cheddar & Honeycrisp Apple Sandwich

One of the sandwiches that was served at the Talk with Joel Salatin  of Polyface Farm yesterday. We’re so proud of the diversity and quality of ingredients that the Hudson Valley has to offer.


  • 3 oz Sharp Cheddar Cheese – sliced
  • 1 Honeycrisp Apple – cored and sliced
  • 1/4 Cup Cranberry-Horseradish Chutney
  • 1/2 Cup Pea Shoots
  • 4 Slices Wheat Bread


Spread the cranberry chutney on each slice of bread. Add the cheese, then a handful of pea shoots, the sliced apple, and a few more pea shoots. Close the sandwich. Slice and serve.

Makes 2 sandwiches
