In the second part of August, Red Onion sponsored another recipe contest, this time the key ingredients were a choice of zucchini, eggplant, and peppers. In the first week, Chef Kevin served up a big pan of roasted and baked squash and tomato something. He told me the name of it, but it was so good my mind went to mush and I forgot the name.
The next week, there were some tasty entries, but the winner, which I tasted and I can attest to its deliciousness, was Robin Blier's pizza, made with caramelized onions and goat cheese.
