SHOPPING FOR MUSHROOMS


At the market, look for mushrooms that are firm and have no soft brown or slimy spots. Fresh mushrooms should feel heavy for their size. “Woody” stems may indicate a tough rather than delicate mushroom.

Store mushrooms on the lower shelf in the refrigerator. Keep them loosely wrapped (a paper bag works well) so they can breathe. If they are in good condition when you buy them, they should keep for up to a week.

Don’t clean mushrooms until you are ready to use them. The best way to get the dirt off is with a soft mushroom brush. Use as little water as possible and do not soak, as this makes mushrooms soggy. Trim any dry ends from the stem.

Cut just before use to prevent browning.
