Aromatic Rice with Green Beans
Rice cooked with vegetables, nuts and spices.

1 tablespoon butter or olive oil
1/2 cup sliced mushrooms
1 cup uncooked brown rice
2 cups boiling water
1/2 pound fresh young green beans
1 stick cinnamon
3/4 teaspoon ground ginger
3/4 teaspoon salt
2 tablespoons slivered almonds
2 tablespoons chopped peanuts

Heat the butter or oil in a 2-quart pot. Saute mushrooms for 1 minute, then add rice and sauté, stirring, for 2 to 3 minutes until faintly colored.

Add remaining ingredients, cover and cook over very low heat until rice is tender and dry, about 45 minutes.

Yield: 4 servings
